Healthy recipes: Fresh broccoli salad Published Nov. 19, 2010 By Kayla Scherf Health and Wellness Center dietician MOODY AIR FORCE BASE, Ga. -- The Health and Wellness Center dietician provides a series of seasonal recipes for each month. November's recipes are based on broccoli. Ingredients: 2 heads fresh broccoli 1 red onion 1/2 pound lean turkey bacon 3/4 cup raisins 3/4 cup sliced almonds 1 cup light mayonnaise or miracle whip 1/2 cup sugar or artificial 2 tablespoons white wine vinegar How to make it: 1. Place bacon in a deep skillet and cook over medium heat until evenly brown. Cool and crumble. 2. Cut the broccoli into bite-size pieces and cut the onion into bite-size slices. Combine with bacon, raisins, nuts and mix well. 3. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad. Let chill and serve. Preparation time: 15 minutes Total time: 30 minutes Makes 8 to 10 servings
