Healthy recipes: Roasted beets with honey-glazed pecans Published Sept. 22, 2010 By Kayla Scherf Health and Wellness Center dietician MOODY AIR FORCE BASE, Ga. -- (Editor's note: The Health and Wellness center dietician will provide a series of seasonal recipes for each month. September's recipes are based on pecans.) Ingredients: 2 pounds beets (about 10 small), washed and trimmed with 1-inch stems intact 2/3 cup pecan halves 3 tablespoons honey 1/4 cup olive oil 2 tablespoons orange juice 1/2 teaspoon salt 1/8 teaspoon ground black pepper How to make it: 1. Preheat oven to 400 F. Place beets on greased foil-covered baking sheet. Bake 1 hour or until tender. Remove from oven and let cool slightly. 2. Meanwhile, combine pecans and honey in small skillet; cook on medium-high heat 4 to 6 minutes or until mixture is simmering and foamy, stir constantly. Immediately spread onto greased baking sheet; separate slightly with fork. Set aside to cool. Mix olive oil, orange juice, salt and pepper; set aside. 3. Peel and quarter beets when cool enough to handle; place in medium bowl. Add oil mixture; mix lightly. Sprinkle with pecans.
