Healthy recipes: Blue cheese apple salad Published Oct. 5, 2010 By Kayla Scherf Health and Wellness Center dietician MOODY AIR FORCE BASE, Ga. -- (Editor's note: The Health and Wellness center dietician will provide a series of seasonal recipes for each month. October's recipes are based on apples.) Ingredients: 3 unpeeled red apples, cubed 2 teaspoons lemon juice 3 cups cubed cantaloupe 2 cups sliced celery 1/2 cup light or fat-free sour cream 1/2 cup low fat crumbled blue cheese 1/3 cup light/fat-free mayonnaise or salad dressing Lettuce leaves How to make it: 1. In a large bowl, toss apples with lemon juice. Add cantaloupe and celery; mix well. 2. In a small bowl, combine the sour cream, blue cheese and mayonnaise. Pour over apple mixture and toss to coat. 3. Cover and refrigerate for 1 hour. 4. Serve in a lettuce-lined bowl. Preparation time: 15 minutes Total time: 1 hour 15 minutes Makes: 12 1/2-cup servings
