Healthy recipes: Turkey apple gyros

The Health and Wellness Center dietician will provide a series of seasonal recipes for each month. October's recipes are based on apples.

1 medium golden delicious apple, cored and thinly sliced
2 tablespoons fresh lemon juice
1 cup thinly sliced onion
1 medium red bell pepper, cut into thin strips
1 medium green bell pepper, cut into thin strips
1 teaspoon olive oil
8 ounces cooked turkey, cut into thin strips
6 whole wheat pita bread rounds, lightly toasted
½ cup plain low-fat yogurt
1 garlic clove, minced

How to make it:
1. Toss apple with lemon juice, set aside.
2. In large nonstick skillet, sauté peppers and onions in hot oil, stirring frequently until crisp-tender.
3. Add turkey to skillet and stir until heated thoroughly.
4. Add apple mixture to skillet.
5. Mix garlic with the yogurt.
6. Fold pitas in half and fill with turkey mixture. Drizzle with yogurt mixture.

Makes: 4 servings
