Healthy recipe: Vidalia onion muffin

The Health and Wellness Center dietician provides a series of seasonal recipes for each month. March's recipes are based on onions.

Ingredients:
2 egg whites, slightly beaten
1/3 cup vegetable oil
3/4 cup skim milk
1 cup self-rising flour
1 cup old-fashioned rolled oats
1/4 cup sugar or Splenda
1/2 cup chopped Vidalia onion
3/4 cup shredded, low-fat or 2% sharp cheddar cheese
1/4 cup pecans

How to make it:
1. In a large mixing bowl, whisk together egg whites, oil and milk; add self-rising flour, rolled oats and sugar. Stir batter until well blended.
2. Gently add in the onion, shredded cheese and pecans. Spoon the mixture into 36 small muffin cups sprayed with nonstick spray.
3. Bake the muffins at 400 degrees for 15 to 20 minutes or until they are golden brown.
4. Turn muffins out onto wire racks and serve warm or at room temperature.
