Healthy recipe: Blueberry and peach cobbler

The Health and Wellness Center dietician provides a series of seasonal recipes for each month. July's recipes are based on blueberries.


Ingredients

3 tablespoons unsalted butter
3 tablespoons unsweetened applesauce
1 cup whole-wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup reduced-fat or skim milk
1/2 cup sugar or Splenda
1 teaspoon vanilla extract
3 ripe but firm peaches, pitted and sliced into eighths (about 3 1/2 cups)
2 cups fresh or frozen blueberries

How to make it

1. Preheat oven to 350 degrees.
2. Place butter and applesauce in 12-inch skillet or 9 by 13-inch baking pan. Heat oven until melted, 5 to 7 minutes.
3. Meanwhile, combine flour, baking powder and salt in a large bowl. Add milk, sugar and vanilla; stir to combine.
4. Add the melted butter mixture to the batter and stir to combine. Pour batter into hot pan. Spoon peaches and blueberries evenly over batter.
5. Return the pan to the oven and bake until top of cobbler is brown and batter around fruit is set, 50 minutes to 1 hour. Remove to wire rack and cool for 15 minutes. Serve warm.
