Healthy recipes: Spinach macaroni and cheese Published Feb. 8, 2011 By Kayla Scherf Health and Wellness Center dietician MOODY AIR FORCE BASE, Ga. -- The Health and Wellness Center dietician provides a series of seasonal recipes for each month. February's recipes are based on spinach. Ingredients: 3 cups medium shell macaroni, uncooked 1 6-ounce package fresh baby spinach leaves 2 tablespoons flour 2 cups skim milk 2 cups 2 percent shredded sharp cheddar cheese, divided 1/4 cup grated Parmesan cheese How to make it: 1. Cook macaroni as directed on package, adding spinach for the last minute. 2. Heat milk on stove in sauce pan; gradually add flour. Bring to boil, stirring constantly; cook and stir 3 to 5 minutes until thickened. 3. Stir in 1 cup cheddar and Parmesan cheeses; cook and stir till melted. Add macaroni mixture; mix well. 4. Spoon into 1 1/2 quart casserole; top with remaining cheddar cheese. Bake 20 minutes. Total time: 40 minutes Makes 6 servings
