Healthy recipe: Barbecue chicken and fruit salad Published April 7, 2011 By Kayla Scherf Health and Wellness Center MOODY AIR FORCE BASE, Ga. -- The Health and Wellness Center dietician provides a series of seasonal recipes for each month. April's recipes are based on strawberries. Ingredients 4 boneless, skinless chicken breast halves 1/2 cup favorite barbecue sauce 4 canned pineapple rings (in own juice) 1 bag mixed salad greens 2 cups halved strawberries 1/2 cup fat-free or light Catalina dressing How to make it 1. Place chicken on rack of broiler pan. 2. Broil 4 to 6 inches from heat for 20 to 25 minutes or until chicken is cooked through, turning and brushing frequently with barbecue sauce during last 15 minutes. Add pineapple during the last 5 minutes of broiling time. Cut chicken into strips. 3. Arrange greens and strawberries on serving plate. Top with chicken and pineapple. Serve with dressing. Total preparation time: 35 minutes Makes 4 servings
