Healthy Recipe: Spicy corn dip

The Health and Wellness Center dietician provides a series of seasonal recipes for each month. June's recipes are based on corn.


1 8-ounce container of fat-free or light sour cream
1 cup of fat-free or light mayonnaise
2 11-ounce cans of Mexican-style corn
4 green onions, chopped
3 jalapeno peppers, seeded and minced
1 7-ounce can diced green chilies
1 1/4 cups shredded low-fat cheddar cheese

How to make it

1. In a medium bowl, mix together sour cream, mayonnaise, corn, green onions, jalapenos, chile peppers and cheese. Ready to serve.
