Healthy recipes: Cranberry-orange sweet potatoes

The Health and Wellness Center dietician provides a series of seasonal recipes for each month. December's recipes are based on cranberries.

2 cups fresh or frozen cranberries
3/4 cup orange juice
1/3 cup walnuts, chopped
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
4 medium sweet potatoes, boiled until tender
Cooking spray

How to make it:
1. Preheat oven to 350 degrees and lightly spray 9x13-inch baking dish or casserole dish.
2. In large bowl, combine the cranberries, juice, nuts, sugar, salt and spices.
3. Peel sweet potatoes and slice into 3/8-inch thick pieces.
4. Toss potato slices gently with cranberry mixture to coat evenly with syrup.
5. Pour into prepared baking dish, cover with foil and bake for 40 minutes or until heated through.
